This colorful, quick and easy salad is Gluten-Free and Vegan!

Nutty, crunchy and so delicious your kids will forget that it’s healthy! We put a base of quinoa on the plate, top it with broccoli, chard and toasted almonds, and dress it with an outrageously tasty salad dressing made from Nona Lim’s Carrot-Ginger Soup stirred together with Sesame Oil and Gluten-Free Tamari.

Ingredients

Salad

  • 1c cooked quinoa
  • 2 leaves of chard
  • 1 small head of broccoli
  • ¼ cup toasted almonds

Salad Dressing

  • ½ cup carrot ginger soup
  • ¼ teaspoon gluten free tamari
  • 1 teaspoon sesame oil

Instructions

Blanch the broccoli and chard (pop in boiling water for 45-60seconds). Put quinoa on plate and decorate with chard, broccoli and almonds. Top with dressing. Enjoy the beautiful colors and textures for an appealing and filling meal! Salad pairs excellently with Nona Lim Carrot Ginger Soup.
