Fruit at season's peak and chopped Medjool dates are used to naturally sweeten this fresh relish, without adding any extra sugar. Fresh pomegranate seeds can also be added for unexpected pops of flavor.

INGREDIENTS

10 Medjool dates, pitted and chopped
1 12-ounce bag of fresh cranberries
1 medium apple or pear, peeled, cored, and roughly chopped
1/2 cup fresh orange juice (or apple cider)
2 teaspoons fresh orange zest
1/2 cup chopped pecans (optional)

INSTRUCTIONS

1. Rinse cranberries well and drain them in a colander.

2. Place the dates in a food processor and pulse until chunky. Then place the apple, cranberries and orange juice into the food processor. Pulse them about 12-15 times until finely chopped but not pulverized.

3. Then put in the pecans and orange zest and pulse a few times to mix. Put in a large bowl.

Tip: This relish also freezes well!
