Eat the rainbow with these quick roll ups. Enjoy for lunch or as a colorful, healthy appetizer.


  • 4 Whole Grain Tortilla
  • 3 Tbls Cream Cheese
  • 1 tsp dill
  • 1/2 cup baby spinach leaves
  • 1/2 cup thin sliced red pepper
  • 1/2 cup shredded carrot
  • 1/2 cup sliced yellow pepper
  • 1/2 cup shredded purple cabbage


Spread the cream cheese evenly over the entire tortilla (including the edges to seal when rolling). Sprinkle the dill over the cream cheese. Spread a thin layer of spinach, then place the few strips of each of the other vegetables. Roll as tight as you can and seal using the cream cheese on the ends. Then slice into one-inch rounds and serve.
