Leave the chicken nuggets behind for these flavorful veggie bites. Your kids will love them!

INGREDIENTS

1 Tbl olive oil

3 cups frozen mixed vegetables (corn, carrots, peas and green beans)

15-ounce can chickpeas, drained and rinsed

1 tsp garlic granules

1 tsp onion granules

1 tsp smoked paprika

1 tsp dried oregano

1/2 tsp salt

1/2 tsp ground black pepper

1/2 cup whole wheat (or gluten free) flour


INSTRUCTIONS

Step 1: Preheat the oven to 400 degrees.

Step 2: In a large skillet, sauté the vegetables, chickpeas, garlic granules, onion granules, smoked paprika, oregano, salt, and pepper in oil for 3 to 5 minutes until warmed through and the vegetables are evenly coated in spices.

Step 3: Add the vegetables and the flour to a food processor and blend until the mixture becomes a thick paste.

Step 4: Form two tablespoon-sized balls and place them on a baking sheet and bake for about 30 minutes, checking if they have browned. Allow them to cool for at least 5 minutes.
