• 8 oz of Soba noodles
  • 6 sliced radishes (or 1 watermelon radish, which are our favorite)
  • ½ cup red cabbage, sliced thin
  • ¼ red onion, diced
  • ¾ cup Snow peas
  • ½ cucumber, sliced
  • ½ cup basil
  • 1 Tbls Sesame seeds
  • 1 Tbls Toasted Sesame oil
  • 1 Tbls Rice vinegar
  • 1 Tbls Lime juice


Boil the soba noodles for about 8 minutes (or as directed on package) until tender. Then drain and rinse them in cold water. Use tongs to toss the noodles with the radish, cabbage, onion, peas, cucumber, basil and sesame seeds. Next drizzle the sesame oil, vinegar and squeeze the lime juice over the noodles and toss once again. Serve cold and garnish with basil.
