1/4 cup olive oil
1/3 cup tahini
1 lemon, juiced, about ¼ cup
1-15 oz. can chickpeas, rinsed, drained
1 zucchini, thinly sliced
½ pint cherry tomatoes, sliced in half
Step 1: To make the hummus: place the following ingredients (garlic, olive oil, tahini, lemon juice, chickpeas) in a blender and puree. Add some water if it becomes too thick.
Step 2: Slice the zucchini into 1/2-inch slices.
Step 3: Cut the cherry tomatoes in half, set aside.
Step 4: Assemble: place 1 Tbl of hummus on each zucchini slice and top with a cherry tomato.
Step 5: Lightly drizzle olive oil and sprinkle with salt before serving.
