• Small package (5 oz) Butter lettuce or Mixed Greens
  • 2 sprigs of Mint leaves
  • ¼ cup of Basil
  • ¼ cup Parsley, picked
  • ½ cup Fresh green peas
  • 1 Shallot, diced
  • 11 Spears of cooked Asparagus
  • ½ cup Snap peas
  • 1 Avocado, sliced
  • ½ cup Lemon juice
  • 6 Tbls water
  • 1 Tbls maple syrup
  • 1 Tbls Dijon mustard
  • 2 tsp Garlic granules
  • 1 tsp Black pepper


In a large bowl, toss the greens of your choice with the mint, basil, parsley and shallots. Begin placing the asparagus, snap peas and avocado over the top in a pleasing way. Then whisk the lemon juice, water, maple syrup, mustard, garlic granules, and black pepper together. Just before serving, drizzle the dressing over the top of the salad (make sure to coat the avocado so it doesn’t turn colors).
