• 2 cups raw cashews
  • 1 tablespoon of lemon juice
  • 1/2 tablespoon of champagne vinegar


Place the raw cashews into a container and cover with water until the cashews are just covered. Continue to soak in a cool, dry place for at least 8 hours. Then dump the water off of the cashews and discard, then add the cashews to a high-powered blender. Pour in the lemon juice, the vinegar, and ¾ cup of water and blend until smooth. If the mixture is not smooth, add a tablespoon more of water and blend once again.

You can also make this into sauce variations like Alfredo Sauce (by adding 3 tablespoons of nutritional yeast and 2 cloves of garlic) or Herb Cheese (by adding nutritional yeast, fin herbs and chives, then draining the mixture in a cheese cloth for 1 day in the refrigerator).
